This online class series will provide you with knowledge and tools on how to cook for yourself and your family to optimize health. You will learn easy to implement techniques for making simple meals more delicious and nutritious. This non-dogmatic approach to nutrition will provide options for everyone, with the intent of shedding light on how to make each diet more supportive for physiological needs. All recipes will be gluten free, with dairy free options, vegan/vegetarian options will be provided for every class. This curriculum is formulated by Elliott Brinkley, owner of Dancing Willow Herbs, certified herbalist with over 50 hours nutritional education and Julie Brinkley, who is a nurse, a certified nutritionist & the author of Comforting Soups Colorful Salads.
Each module will include a 40-60 minute long video, with cooking demonstrations and discussion of weekly learning topics. In addition to the video, you will receive a PDF containing detailed recipes and more information on nutrition and herbal topics discussed that week.

Class Content:
Week one- Introduction to Healthy Eating: We will discuss good quality fats, proteins, carbohydrates, organic vs conventional vegetables, fruits, salts and how to build a healthy plate.
Week two- Breakfast: We will discuss the importance of breakfast, what a balanced breakfast looks like, and provide several easy breakfast recipes for you to introduce into your life. Breakfast recipes will include herbal congee (sweet & savory), chicken soup, herbal broth, and vegetable hash.
Week three- Lunch: Practices for optimizing digestion, especially in the middle of a busy day. Lunch recipes will include rainbow salad, red lentil soup, cauliflower rice and cucumber salmon bites.
Week four- Dinner: How to relax and ease yourself into dinnertime, the emotional benefits of a communal dinner. Recipes will include taco bowls, and lamb stew.
Week five- Dessert: The medicine of sweetness, without the troubles of refined sugar. How to support your body when you indulge in sweet treats. Recipes include herbal cookies, Baghdad delight, after dinner tea with hazelnut creamer.
